Soufflé Saturday with Chef Jacky Robert at Ma Maison

Last Saturday, we got to test our cooking skills with famed Chef Jacky Robert at his co-owned restaurant Ma Maison (272 Cambridge St, Beacon Hill). For a little over 2 years, Chef Robert has been revitalizing the French cuisine restaurant by adding an elegant twist to cozy comfort foods. That morning, we were invited to learn how to make their famous chocolate soufflé complete with the recipe. We were walked through step by step and then were treated to a decadent three course lunch.

The souffle making process brought out our competitive sides as the best souffle enabled us to get a prize of a gift card.  In between the cracking and whipping – eggs that is – we got to munch on delicious freshly made plain and chocolate croissants. It was very difficult not to gorge on the piping hot treats, but there was much more eating to come.

After our souffles were taken to bake in the oven we were then invited to enjoy lunch. The chef and his team was extremely accommodating to dietary needs such as gluten free and vegetarian. The piping hot fresh bread continued with a baguettes, and I was treated to a chunky Gazpacho, and Lentil Cake topped with the rare ovoli mushroom and a large asparagus stalk.  The outside of the lentil cake was incredibly crispy, not oily, with a satisfying crunch.

For the carnevores, they delighted in either Chilled Vichyssoise with Smoked Salmon or Lobster Bisque with Lobster Bits. The bisque has such large portions of lobster one had to cut it with a knife. For the entrees they had a choice of the Boeuf Bourguignon, Croquette Potato or the Seared Sea Scallops, Crab Meat and Sauteed Spinach.  The Croquette Potato was almost as beautiful as my lentil cake.

For dessert, Peach Crème Brulee or Chocolate Mousse, Langue du Chat – fortunately my dinning companions were willing to share.

The results came in for the souffle and sadly, mine didn’t win, but it was fun in the pursuit.
